Corn Salad Recipe

I am so excited to share my favorite go-to side dish that the Nikola Clan is loving this summer!!

I have to thank my sister-in-law for making it while we were all on vacation in FL- that’s where I got hooked! (Recipe adapted from eazypeazymealz.com)

This corn salad is served chilled with red onions and the cilantro and lime give it such a refreshing taste- it is simply delicious, and gluten free friendly! #sophiaapproves

Here’s what you need to do:


You need:

4 1/2 cups of cooked Corn (I prefer frozen bags. You can use ears)

1 small sized Red Onion, chopped (Approx 1/2 cup) 

2 TBS of EVOO

2 TBS of Apple Cider Vinegar or Rice Vinegar

1/3 cup of diced, Fresh Cilantro

Juice from 1 Lime

Do this:

Combine all ingredients into large bowl, mix, cover in air-tight container and pop into fridge (or if you’re like me, in the freezer for a few mins. before serving) to chill.

THAT’S IT!!!! 

This makes a perfect side for any Mexican meal like tacos, quesadillas, enchiladas, or even a fab addition to your next BBQ.  Trust me, there won’t be much left-over!
