Summer Time Giveaway!!

It's here!!  Happy Summer Vacation!!!

I know some mamas are literally jumping for joy, especially the teacher mamas.. I also know that some of us are a bit anxious thinking, "two whole months with my kids and no school!?!?"

Clean Oatmeal Muffins-Yum!

I finally found a delicious recipe for clean oatmeal!  The last time I attempted to make anything with Old Fashioned Rolled oats, I was not thrilled.. In fact, the whole dish went right in the garbage!   However, these little muffins are super tasty and easy to make!  These are NOT gluten free!

You Need:

  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 cup applesauce, unsweetened (apples in Vitamix or blender work well, too)
  • 1 banana, mashed
  • 1/4 cup honey
  • 2 1/2 cups, Old Fashioned rolled oats
  • 1/8 cup chia or flax seeds (optional)
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoon baking powder
  • 1 1/4 cups milk
  • Toppings such as blueberries, raspberries, strawberries chopped apples, raisins, chocolate/peanut butter morsels 


Do This
  • Preheat oven to 350 degrees.
  • Mix eggs, vanilla, milk, applesauce, banana and honey together in a bowl.
  • Add in oats, chia or flax seeds (if using), cinnamon, and baking powder.
  • Mix well.
  • Grease a muffin pan or line with cupcake liners
  • Divide mixture evenly into 12 muffin cups.
  • Adding topping
  • Bake for 30 minutes or until toothpick comes out clean like a cake.
ENJOY!!

I put them in a ziplock in the fridge and The Hubs and I are eating one every morning.  Pop it in microwave for 30 seconds- done!  I also put some peanut butter in mine this morning- perfect touch! 

21 Day Fix Friendly- one yellow and 1/4 purple (depending on toppings).

Again- NOT gluten free.  

I'm such a fan of these!  Can't wait to make another batch and try different toppings.. Will you give it a whirl?  You won't be disappointed!

Memories {Gone fishin'}

I'm sure you wouldn't have guessed I was quite the Tomboy growing up.  Living on a farm and being around 18 wheelers since the day you were born would do the trick!  I wouldn't change riding my dirt bike and ATV for hours at a time, getting all decked out in camo to go hunting with my dad (never shot anything.. I was more of his 'sidekick'), or helping him roll up the water hose #troncillitowater after filling a pool. 

One of my favorite memories- fishing. Whether it was fishing with my Dad in the ponds close to our home or getting up at 5:00 AM to go with my Poppy- I always enjoyed casting the rod and watching for the dobber to go under.  I must admit, 9 times out of 10, I wouldn't put the worm on the hook or get the fish off the hook- I left that for the men... That's just plain EW...lol  

Last night, Sophia had her first fishing expedition with my dad (her Poppy) and Poppy (Big Pop).. I couldn't stop smiling- the excitement of my dad casting her line for her was contagious. Her focus while reeling the lure in was impressive and watching my Dad with her brought me back to my favorite tomboy memories.  
Sophia, I hope you have many more memories like this- I know you will cherish them as well as those who helped make them memorable. #thankyoudaddy.
