A friend of ours grew his own pumpkin patch this 
year and my Dad wanted to bring Sophia to it to snap some pictures. I didn't object to a photo op!

The new Denim

Just a quick fashion alert!

Investing in anything leather/leather-ish is a MUST this fall and winter season!!  Target has a great selection of "leather-ish" clothes and accessories.  I'm eying a jacket at the moment ;)

Quick side note- Every time I think of leather pants, I think of that episode of Friends with Ross and his leather pants!!!  Remember this?!?

Hi Everyone!!

I AM STILL ALIVE!!  I apologize for being so MIA.  I've been swamped with my school work :/

I wanted to share with you something that honestly touched my heart and reminded me there are such amazing people in this world.

How sweet is Lorraine?  I met Lorraine through Andrew and we are so fortunate to have met her and her daughter, Genna.  Both Lorraine and Genna are such kind people.  
We heart them here at BTWD! :)

I share this with all of you because I hope this inspires you to do a little "something" for someone- it can truly make their day/week and it will certainly put a smile on their face!!

Mom + Wife + Teacher + Blogger {not enough time in a day}

This past week was my first time back to work as a full-time, middle school special education teacher, in over a year.

Last year, I was offered a part-time teaching position in the school I fulfilled a leave replacement the prior year, while I was pregnant with Sophia.  I was ecstatic to be offered such a wonderful opportunity and it was a great transition from just having Sophia.

This past summer I was offered a full-time position in the same building.  Even though I enjoyed being part-time, I was ready for the full-time position.

With that being said, Born to Wear Diamonds is going to take the backseat for a while.  I hope to become a "Super Mom" and be able to juggle being a mom, wife, teacher, and blogger but it will take some time to figure out how to do it all, to say the least.. ha!  I need 10 more hours in a day!!   It makes me sad that I can't dedicate as much time as I'd like to because I absolutely love this new blogging venture I started back in January.  I appreciate all the emails and support I've received from all my readers. I heart you all <3

I will try to post at least once to twice a week, but that is subject to change.  I can say I do have some exciting posts in the works that I know you'll really enjoy :)

In the meantime, please feel free to continue to email me or leave comments/mommy questions or requests.  I will still be posting on the BTWD Facebook page and Instagram.

We'll be back, real soon- Promise ;)

Super Easy & Delish Mac. & Cheese {Three Cheese}

 There is nothing like a delicious dish of macaroni and cheese to complement your lunch or dinner.

I'm going to share with you a super easy (Heather proof) and delicious recipe that I know all you mac. and cheese lovers will enjoy.

You Need:
1/2 pound macaroni- I've used rigatoni, penne, and fusilli
1 1/2 tablespoons unsalted butter
1/4 cup Parmesan cheese
1/4 cup Panko Breadcrumbs 
2 tablespoons all-purpose flour  
3/4 cup milk 
4 ounces cheddar cheese, shredded (1 packed cup)  
4 ounces deli-sliced American cheese
1 large egg yolk  
1/4 teaspoon paprika 
6 ramekins- 3.5 inches

Do this:
  1. In a large saucepan, melt the 1.5 tablespoons of butter. Whisk in the flour over moderate heat for 2 minutes. Whisk in the milk and cook, whisking, until boiling, about 5 mins. Add the cheddar and American cheeses and whisk until melted. Off the heat, whisk in the egg yolk and paprika. Fold in the macaroni. 
  2. Spray the bottom of the ramekins with cooking spray then sprinkle the Parmesan cheese in the ramekins.
  3. Gently spoon the macaroni into the prepared ramekins. Sprinkle panko breadcrumbs over the pasta.
  4. Bake them on the upper and middle shelving of the oven for about 10 minutes, until golden and sizzling. Let cool for 5 minutes. 

    Want to make this for a kid-friendly party? Try making them in little muffin tins!! The kids will go gaga over it!!
